Red Velvet White Chocolate Cookies

Every place I have been to this week is filled with hearts, candy, treats, and all things red and pink. I figured I better get into the Valentine’s spirit a little bit and bake some of my kids favorite cookies. A few years ago I went to a Valentine’s cookie exchange and this Red Velvet Cookie recipe was the cookie the kids requested be made again. The cookies are so yummy and actually very versatile…these also work well for Christmas, just use different color sprinkles!

♥ Red Velvet White Chocolate Cookies ♥

  • 2 ½ cups all purpose flour
  • 2 ½ Tbsps cocoa powder
  • 1 ½ tsp cornstarch
  • ¾ tsp baking soda
  • ½ tsp salt
  • 7 Tbsps butter, room temp
  • 6 Tbsps vegetable shortening, room temp
  • 1 ½ cups sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 tsp white vinegar
  • 1 ½ tsp vanilla extract
  • 1 Tbsp red food coloring
  • 1 package white chocolate chips
  • sprinkles for decorating

Preheat oven to 350 degrees.

In a medium bowl, mix together flour, cocoa powder, cornstarch, baking soda, and salt. Set aside.

Add butter, shortening, and sugar to large mixing bowl. Mix on medium until fluffy, about 3 minutes. Add egg and egg yolk, mix until just combined. Then add vinegar, vanilla and red food coloring. Mix until well blended.

Slowly add dry ingredients and mix until just combined. Stir in ½ cup white chocolate chips. Scoop cookies onto parchment-lined baking sheet. Bake cookies for 11 minutes. Allow to cool for a few minutes before moving to wire rack.

After cookies are cooled, melt the rest of the white chocolate chips and dip each cookie half way and add any decorations while chocolate is still warm. Let chocolate harden on cookies on top of wax paper.

Makes approximately 3 dozen cookies
